Soak the wild dried mushrooms in filtered tap water for 8 hours.
Fill one large pot with filtered tap water. Remove the sauerkraut from its containers and squeeze it over the sink to remove the fluid then place the sauerkraut into the pot with the tap water. Once all sauerkraut is in pot, remove kraut from pot again and squeeze out the fluids then place into second dry large pot. Pot will need to eventually fit all ingredients so pick a large one.
Boil enough water to cover the now squeezed and rinsed sauerkraut in the large pot. Pour boiled water, let it cool a minute or two, over the sauerkraut. Place the large sauerkraut pot over medium to low heat and let it simmer.
Bring soaked wild mushrooms to a boil in the water they soaked in and let simmer. Then drain the broth and add to large sauerkraut pot and stir in. Save the mushrooms.
Dice mushrooms into nail sized pieces and add to large sauerkraut pot and stir in.
Add whole allspice, ground black pepper, and bay leaves to sauerkraut pot and stir in.
While sauerkraut is simmering cut pork, beef, and bacon meat into small nail sized cubes. Also dice the onions.
Flash fry beef meat cubes in olive oil with a dash of salt and a few dashes of pepper. Do not use the bacon grease for this. Add to large sauerkraut pot and stir in.

Remove Bigos from heat, stir it gently, let it cool.
Bring Bigos to a low simmer over heat.
